3 Step Simple Peanut Butter Chicken
Chicken is a good source of protein. When cooked in peanut butter or spread in our case, not only are the flavours enhanced but the overall nutritional value is strengthened as well. That said, let us jump to the delicious and mouth-watering recipe.
2 tbsp vegetable oil
8 skinless boneless chicken thighs, cut into chunks
1 garlic clove, crushed
2 finely sliced red chillies
2 tsp grated fresh ginger
2 tsp garam masala
1 tsp chicken masala
1 tsp chilli powder
50ml coconut milk
400g chopped tomatoes
400g chopped onions
1 small bunch coriander, chopped
- Heat 1 tbsp of the oil in a deep frying pan over medium heat and brown the chicken. Set it aside once golden.
- Fry the garlic, chilli and ginger in the other 1 tbsp oil for a min. Add tomatoes, onions, original peanut spread, coconut milk and stir them and bring to simmer. Add the garam masala, red chilli powder, turmeric powder, chicken powder and fry for 1 min more.
- Put the fried chicken to the pan and let it cook for 5 mins and garnish with coriander and serve.
